Before you get started you have to find the right cut, if you are going to splurge on a steak it's definitely worth speeding the extra money to get a quality steak that you will enjoy eating. All steaks are considered the "fast" cook cuts meaning you can throw them on the grill, flip and get a finished steak anywhere from 10 - 30 minutes. This is opposed to roast cuts that are "slow" cook cuts like pot roast or rib roast that generally take a crock pot or roast pan and a few hours to get to the desired consistency. Now once you get to the grocery store and head to the meat department you will have a variety of cuts to choose from. Some of the most popular are The Ribeye (aka Delmonico or Spencer Steak) this cut is near the front of the cow in the Rib primal cuts and has a very marbled and distinct beef flavor due to the large coating of fat around the edge. It's very rich and has a smooth texture. Another great cut is the New York Strip (aka Kansas City Strip or Top Sirloin) this cut is located towards the rear end of the cow on the short loin, right behind the ribs. It has a tighter more chewy texture with some marbeling but without large fat pockets making it easier to trim and eat the steak. The top choice of all steaks by most is the coveted Filet Mignon (aka Tenderloin or Châteaubriand) this cut is the leanest and tenderest steak on the whole cow. The texture when cooked properly gives you that melt in your mouth buttery taste.

The Perfect Steak Recipe:

Ingredients:

  • 2 quality steaks (filet mignon recommended)
  • 2 teaspoons soy sauce
  • 1/4 cup Italian salad dressing (olive oil and balsamic vinegar base)
  • 1 tsp Garlic Salt
  • 1 tsp Garlic Pepper
  • 1/2 tsp. caynne pepper (optional)
  • 1 clove garlic (crushed)

Method:

  • Blend ingredients together as a marinade
  • Soak steak in marinade for 2-4 hours
  • Once marinated grill on medium high heat
  • Turn every 5 minutes until cooked to your taste

A good measure of doneness is the “face” test. When rubbed gently with a fork or spatula the steak will feel like your cheek for rare, your chin for medium and your forehead for well done. Once cooked pat yourself on the back and enjoy it with a green salad and glass of red wine.
